Ingredients

  • 2 eggs
  • 1 Cup Milk
  • 0.5 teaspoon salt
  • 1.75 all-purpose flour
  • 0.5 cup vegetable oil
  • 1 cup granulated sugar
  • 0.5 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 cup semisweet chocolate chips
  • 0.5 cup unsweetened cocoa powder
  • 2 ounces unsweetened chocolate, chopped

Instructions

  • 1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  • 2. In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  • 3. In a separate bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract until well combined.
  • 4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  • 6. Fold in the chocolate chips. Using an ice cream scoop or spoon, divide the batter evenly among the muffin cups
  • 7. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean
  • 8. Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
  • 9. To make the chocolate dressing, melt the chopped unsweetened chocolate in a heatproof bowl set over a pot of simmering water. Stir until smooth.
  • 10. Drizzle the melted chocolate over the cooled muffins.
